Typically for a two night weekend break, many people will aim to leave on a Friday and come back on a Sunday, being ready for work the next day, but if you can switch it round and stay Saturday to Monday, you could grab a bargain. Sunday nights can often be cheap at a lot of city centre hotels because weekend travellers are heading home already and corporate travellers may not arrive until the Monday. That means empty rooms that hotels want to fill and they often do by offering cheap rooms, helping you get away under your £300 budget.
How about trying a new, undiscovered destination? The flights to lesser travelled cities may not be as busy and therefore could be cheaper if you take advantage of airline sales and deals. You might also find that once you arrive, being off the beaten track a little will bring costs like dinner down because it isn't as touristy.

Porto
If you've not yet discovered this city, a weekend break in Porto can come in at less than £300 per person. Flights can be less than £100 which leaves plenty of room for a hotel stay and some food. It's a bit cliche but Paris is another great city to be discovering for under £300. For those who can, Eurostar is a great option to travel, although trains from London to Paris on a Friday night get booked up quickly, so it's worth planning ahead for this one. From other parts of the UK, there are a variety of flights available into Paris Charles de Gaulle airport.
